The toastest with the mostest

I wish that I could tell you that I baked this lovely loaf of bread, but I didn’t. Over the holidays our friend’s family stayed in our apartment while we were away in Kelowna and when we came home we found this bread waiting for us. Thanks guys!

On my last day of holidays I decide to put this loaf to good use. With making the most of the one day that we had left in mind, I wanted something simple and delicious. What is more delicious than eggs, avocado and bacon? Probably nothing. So, I crisped up some bacon, smashed an avocado and poached a couple of eggs.

We enjoyed these little guys with a hot cup of coffee and then hit the road in search of adventure. When I say adventure I mean grocery shopping, buying a new door mat and picking up a few different varieties of green tea. So fun, so adventurous!

Lunch time treats

My usual lunches are made up of salads in the summer and soups in the fall and bread doesn’t have much of a place in my kitchen. When I am lucky enough to get a sandwich, a local place called Finches makes some of my favourites.
OLYMPUS DIGITAL CAMERAOne such favourite includes pear slices, blue cheese and walnuts. I have been craving one of these sandwiches for a while, so I decided to attempt a re-creation of sorts at home.
OLYMPUS DIGITAL CAMERAIn my version of the sandwich I switched out the blue cheese for a nice double cream brie, added a few slices of prosciutto, some sliced grapes, walnuts and topped it off with some olive oil and balsamic vinegar. Perhaps these simple and delicious sandwiches don’t have to be treats after all.

Le pique-nique

Just in time for summer, we are celebrating International Picnic Day. Yes, there actually is a day for that – today, June 18. And it turns out to be an event that I can get behind. Around here, we like to pack up a meal or two every week and head outdoors. Often times it will be a late Sunday afternoon or maybe even a Thursday night, when we feel like getting the weekend off to an early start. We’re lucky enough to be within biking range of a lovely park with picnic tables, trees and plenty of grass for running and lounging.

The glorious thing about picnics is that there are no rules. A picnic can be as fancy or as basic as you like. Invite all of the friends that won’t fit into your dining room out to the park, or make it the most cozy of meals with a special someone. And food suitable to eat outdoors is pretty much only limited by your imagination and the time you have to put it together.

Most often, I rely on a few delicious items that I pick up at my favorite shop. If I have time, or plan ahead, I might make a simple salad or some other dish to take along. And I do have this crazy plan that maybe one day, I’ll pull a piping hot fruit galette out of the oven and roll down to the park with a frosty cold jar of heavy cream. We’ll take turns shaking the cream and spooning the goodness onto our just warm gallette. One day…

Summer after summer, I get more of a picnic routine down. With a little gathering of supplies in advance, I can get us out the door and on our way to the park by 6 p.m., even after a full day of work. This is the lovely part about picnics, they don’t have to be complicated. Head down to a well stocked grocery store, grab a few of your favorites and head off to eat. Depending on the day, I might pack up a couple of real glasses or just throw in the melamine plates that came from a picnic set we got years ago. Meals are also quite tasty eaten by hand with a napkin to catch the drips and brush away the crumbs.

Cook the cover or die

Have you ever had someone tell you that they would basically disown you if you didn’t cook something for them? Yeah, that happened to me. The whole ordeal started about a week and a half ago at the grocery store when my partner in crime noticed the April cover of Bon Appétit. He is either fairly observant, or maybe just an eavesdropper, but he certainly is a tricker and some how knew how to play me to get just want he wanted. After examining the cover he said to me “Hey, weren’t you and Ginger going to try to cook the cover of Bon Appétit again soon?” You can guess what happened next. I absent-mindedly confirmed his suspicion and the next thing I knew the magazine was in our grocery bags and I had committed to spending my Sunday making Fried Chicken Sandwiches with Slaw and Spicy Mayo.

Long story short. I cooked the cover and it was delicious!
